DAIRY, DELI, AND BAKERY INDUSTRY SHOW UP FOR IDDBA 2022

ATLANTA — International-influenced delicacies, artisanal offerings, decadent sweets, and tasty takes on old favorites were among emerging trends spotted at IDDBA 2022 (the signature event of the International Dairy Deli & Bakery Association).

The annual event, held June 5-7 in Atlanta, marked a return following a nearly three-year hiatus and featured almost 1,600 exhibiting companies and more than 7,500 attendees.

The show encompassed products, influencers, entrepreneurs, celebrities, and industry disruptors from the dairy, deli, and bakery industries. Walking the show floor, brands are bringing new news to retail and simultaneously reimagining classic flavors.

Here’s just some of what we saw..

 

INTERNATIONALLY-INSPIRED FLAVORS

Hispanic brands and businesses are increasingly involved in the dairy, deli, and bakery industries. Senor Rico brought Arroz Con Leche and Horchata Pudding, and Del Sol brought the heat with various peppers.

Other products at the show featured internationally inspired flavors and treats. With over 160 years of tradition, Fiorucci Italian Deli meats brought authenticity and flavor to uncured, 100% natural deli meats products. There were also buttery brie, camembert, and creamy, fresh goat cheese from Labonnevie and Gourmet Foods International.

A handful of makers exhibited old-world traditions and experiences. Monte Nevado is a member of the Consorcium of Jamón Serranohas, curing hams in the Sierra de Guadarrama mountains near Segovia since 1898. Each ham is packed in salt, cleaned, and then hung to dry for up to 20 months. After hand inspection, the Jamón Serrano can be placed in a holder and sliced thin.

But, the deli is not all about the traditional. Aussie Select is a new company that delivers hand-crafted, modern charcuterie meats. As the name implies, Aussie Select starts with Lamb from Down Under, arguably the finest in the world. It’s free-range and naturally fed on abundant pasturelands, so it’s mild tasting and naturally lean and tender. Their initial range of super-premium, pasture-raised lamb meats includes Tikka Masala Lamb Ham, Agave Rosemary Lamb Ham, and their two-time-award-winning Lamb Pastrami.

Speaking of awards, winning can come from the oddest of places. Schuman Cheese turned a surplus supply of Parmesan into an award-winner by aging the leftover cheese for three years (instead of the regular 16 months). The Schuman Cheese Special Edition Cello copper kettle parmesan was recognized at the 2022 World Cheese Championship.

 Sweet Treats

And, we’d be remiss if we didn’t cover some of the sweet treats at IDBBA22. Vandemoortele debuted two new lines of French pastries that ship frozen to in-store bakeries but look and taste like house-made treats, including a fresh banana cake, apple cake, and chocolate coconut cake. Fudgeamentals brought joy with almost a dozen varieties of sweet, high-quality fudge.

Several brands on display also highlighted doing good in the community. Fresh Cravings “Salsabrate the Good” program has donated over $250,000 in the past year, partnering with 50 local non-profits. Treasure Mills launched a new line of “School Safe” products, all coming from a facility dedicated to creating dairy-, peanut-, and tree nut-free products.
